There are plenty of nights watch plots that could be made from their actions in the books.

Take the black: gain control of opponents character, that character gains the nights watch trait. Needs some kind of limitation on the character that can be taken.

Empty the black cells, cost reduction (or deck search) for nights watch character.

Open the gates, cost reduction for wildling characters.

The iron bank, 6 gold plot that reduces the amount of gold gained the following turn.

Breaking the vow, nights watch characters do not kneel for the first challenge.

I actually imagine a card called Take the Black to be a 0 cost attachment that gives a character the Night's Watch trait, and something else like +1 Strength, similar to Knighted (KotStorm).
