Highgarden vs stealth characters

The characters do not need to remain participating in the challenge - stealth places a lasting restriction on the defending player's character. It's similar to, say, Dornish Paramour. You could remove the Paramour from the challenge prior to the declaration of defenders, but the 'lasting' effect on the chosen character persists.

 

p20 Stealth 

 When a player initiates a challenge, for each character with stealth he or she declares as an attacker, that player may choose one character without stealth controlled by the defending player. Each chosen character is considered bypassed by stealth, and is not eligible to be declared as a defender for that challenge.

 

 

As you can see, the character being removed (dying, etc) happened after the character was chosen, so that stealth effect continues to matter. And heck, what could be stealthier than someone who actually isn't there?

My opponent declares 2 stealth characters to participate in attack, bypassing 2 of my own characters. Before declaring defenders, I use highgarden to remove one of these stealth characters from the challenge. Are my 2 characters still bypassed by stealth, or is 1 no longer stealthed since a stealth character is no longer participating in the challenge?
