Ventris is in an interesting place because of her point cost versus what you get for it. Her ability is super obnoxious to deal with but remember you dont need to run her elite to make use of it. There are a few low cost characters you can pair her with but you have to look at how many dice you will start with. Many of the combos will give you 3 dice to start which was ok before. Nowadays, 4 dice setups and even 5s are possible and that can put you at an early disadvantage if your opponent rolls well. I have seen ventris used a couple times in tournaments but I dont think I've seen her win one, at least not in my meta. You can probably find a pairing that will get you 4 dice. Dooku might be the best option given the change to vibroknife that just went into effect as of today with the new FAQ. As you said, you will not have a lot of health so make sure you run plenty of removal as well as force illusion. You have to accept that your opponent will likely kill ventris first so make sure your buffing up dooku so that he can handle the late game. Rise again will probably be helpful. I also played a version with her using elite Aurra but didnt do so well. I couldnt roll well with Aurra and when I did her dice usually got removed. Ventris is an annoying character to play against but not really a threat to beat you so she needs to be paired with heavier hitters and thats hard to do with as much of your build cost as she will eat up

I like Ventress Dooku for mono blue. It can be be melee focused or use the Holochron/Force Powers shell (although that comes with a bit of a vulnerability to Rend). I played against a friend's Ventress Vos deck and it seemed very clunky. It wasn't as synergistic and you would assume.
A more discard focused build that teams her with Jabba is fun (for you at least). She has a focus side too, so Chance Cube into a big Buy Out is feasible.
I also designed (but actually played) a cheeky blanks focused deck with elite Ventress First Order Stormtrooper and Guavian Enforcer pre-EaW. It had Meditate, Anger, Manipulate, Power of the Dark Side. Not sure if it would have been good, but it was an idea.
