Curious if this card removes the defender from the challenge, as it says "during a challenge". So say I was attacking with one attacker, and my opponent had one defender, if I take Moqqorro out of shadows, could I remove the defender and so win the challenge undefended?

Yes, the defender will be removed before the strength comparison, so you can take your unopposed win.
