The Boltons of Mormont

The one thing that would worry me about only deploying a few Boltons on the table is that against Lanni you would just have them knelt out and then lose challenges and have them all swap sides. I would look at putting The Bastard of Bolton in your deck as a contingency for this. Coldhands is also good as the characters return to play under their owners control.

Because I'd want more than 1 Roose and Bastard, and have Maege also, Widows Watch could be worthwhile.

On plots, Fortified Position is a great one to include in a Bolton deck.

Finally, I'd look at putting Reek in.

I can tell you have been using Lannister more and more with that kind of thought ;)

The issue with Fortified Position is it also turns off all my other good characters, so NCF, Maege, Syrio, and more. So all of their abilities which is why I picked them are useless for a turn.

I thought about Reek, but I'm not that strong on Intrigue, so wouldn't get to trigger his ability as much as I'd like.

I tried it out yesterday a couple of times, with Wyman and Arya taken out, and it held up pretty well. Once Rickon was out with Maege, getting two locations was mean! Although, I then thought about other cards I could use. The first was Riders of red Fork, so I can get characters out of the deck faster. The other was Galbart Glover, as he would allow me to search my discard pile for locations instead.

You don't need to be. The opponent isn't going to let you win an intrigue with him if they can help it, so you can think of him as a card you kneel to kneel an opponents card. I think Reek provides a big psychological edge.
