Could be possible to put the retrieved eagle under Eagles of the Misty Mountains instead of return it to your hand? If so, it'd be a nice combo!

I think so - in any case a number of Eagles have a discard ability (e.g. Vassal of the Windlord, Landrovar) so they could be fetched, discarded for their ability and then put under Eagles of the Misty Mountain.

Eagles of the Misty Mountains uses the text "After another Eagle character leaves play", and returning a card to hand counts as leaving play. So yes, the Gwaihir/Eagles of the Misty Mountains combo would work.
