Is Griff (CD)'s response considered as a save?
No, it would have to outright state that it's a save. As it is it just changes the destination the attachment moves to. Well, technically it's more complicated than that, but for the sake of your question that's all that matters ;).
If I play this copy of Pentos, and I also have the other Pentos (with multiple house affiliations, and reduces the first army character played each round, from the CD set) in play, does this mean I can't play this card other than to dupe the Pentos already in play?

I can use this to discard attachments that were put on my char by my targ oponenet correct? Like kiss and dragon fear.. 

No, I don't believe you can. Discarding the attachment is a cost, and costs can only be paid with cards that you control. That said, if you take control of the attachment with Crown of Mereen (QoD), you could.

It is a phase that is created by some card effects. Do a search for events with the "Epic Battle" trait.

What about the case, when I have a character with two attachments. My character should be killed and I play the response (discard first attachment from play to save attached character from been killed). My opponent cancels this resposen.

Responses can only be used once per opportunity per card. Otherwise, if a card let you claim 1 power as a response, you could use the response 15 times and instantly win. If you have two identical cards with a response, each one can be triggered once since they are separate cards.

 

The only exception to this rule is for cards that leave the play area (people commonly say that cards 'remember' activating while in play but 'don't remember' while out of play). Jumping Catelyn enters play from your hand through her abaility, but if the effect is canceled she returns to your hand. Since cards in your your hand are not in play and don't 'remember' if their effects have been activated or not, you can use Catelyn's effect again in the same response window.

Technically you can cancel it, but they can activate the effect again as their next action so in general there's no point in doing so. There are some very limited reason you might want to, though. The other players have a chance to use actions before the Stark player could use an action to bring Catelyn back in, so if you also had some way to discard cards from the Stark player's hand it might be worth it to send Catelyn back to the hand and then try to discard her before she can enter play, especially if she was the only card in hand.

 

Also, Drogo (core) enters play from the hand as a response, so you could use He Calls it Thinking (PotS) to cancel the effect and then give a character 2 STR if you really needed to bump a character to save it from being burned. Otherwise it is generally useless to cancel effects triggered from out of play since they can be activated again immediately.

Hang on, I forgot that there are two Catelyns that enter play from the hand, so I was jumbling things up a bit. I'll try to explain one more time:

 

Catelyn (core) enters play as a response. If this response is canceled she returns to the hand and the response can be triggered again in the same response window.

 

Catelyn (LoW) enters play as an action. If the action is canceled, she can be put into play as the Stark players next Action, not during the response window used to cancel her entry. Sorry if I made this unclear.
