His response is mandatory? Like if I control an opponent character with Reek?

Nothing with "Response" (or "Any Phase:" or "[Specific Phase]:" for that matter) is mandatory. You may choose to trigger them or not to trigger them as you wish.

Does this work with enslaved, coldhands and ygritte etc?

With enslaved and Ygritte yes, with Coldhands no, since characters are not in play.

How it works with enslaved? Character comes back to his owner (because of Roose) and after that is immediately returned to enslaved controller?

You win with Roose, trigger his response, take control of the character you own and it stays under your control with attachment on it.
