Let's say that I wanted to attack with Balon G. So after choosing him as an attacker I used Longship Iron Victory (KotS) to get him to 5 STR. Does this mean that only characters with 5 STR or more can block him? Or is it printed STR that counts?

What you describe is correct, provided you knelt the Longship before your opponent declared defenders. When it's the printed strength that counts, that's what the card says (for example with Venomous Blade (TBoBB)). So yes, Balon's awesome in this scenario
