Could this be used to cancel a He Calls It Thinking (Pots) used to cancel a character response, or would it not be possible since HCIT also attaches to an opponent's character?

I know that a cancel has to cancel the entire effect, but the effect of HCIT that attaches it as an Attachment is part of a 'Then' clause, so I'm not sure.

No. The target of He Calls it Thinking is the effect it is cancelling, so it's not eligible to be cancelled by FCDtS.

But if the effect is separate from the card, wouldn't that mean that HCIT could cancel the response of a character that is Immune to Events, since it is not targeting the character?

Ah, it seems you are right. After checking the FAQ in section 3.20 it states that "trigggered effects originating from the immune card, can still be affected by cards of the type to which that card is immune, as long as the affecting cards do not target the immune card." I just never realized that cards could target effects without targeting the card the effect originated from.

Correct.  This is also why, if your House of Dreams location has a triggered effect, it can still be cancelled. 

To conclude, this cannot cancel He Calls It Thinking. He Calls It thinking is targeting Response: of a character, and not the character itself. :)
