If I have 3 of these in play do you get 3 gold for 1 discarded card or would I have to discard 3 cards separately?
As answered in the rules section, each ability is triggered independently, and you have to pay the cost (discarding a card) each time. With 3 in play, you'll be able to discard 3 cards a phase instead of 1, for 3 gold... but otherwise, you're not gaining much.
If it were to work the 'other' way, it would be worded something more like "Reaction: After a card is discarded from your hand, gain 1 gold". Then, once a card were discarded from your hand, all three copies of Old Forest Ranger could all 'react' to that trigger to generate gold.
i realized two tournaments too late that this is actually "once per phase".
i thought it was "once per round". So sad.
