Can I choose a kneeling character without an i.e. INT icon to defend an INT challenge?
Sure. There is nothing on the event card saying the character must have the corresponding challenge icon in able to be chosen as a target, and there is nothing in the rules that says a character must have the corresponding challenge icon in able to participate in a challenge of that type. So the challenge icons of the kneeling character don't interact with this event at all.

The card also says that the character is participating so a character bypassed by stealth can also be "declared" (it is not a declaration)?
As far as I can tell, you are correct. The character would not be "declared" as a defender, so could still participate in the challenge as a defender, even if it was stealthed.
"Challenge Icons: These icons appear on most character cards and indicate which challenge types the character may be declared for as an attacker or defender." (p. 4).
So it's actually right there in the definition of challenge icons: They only apply to the challenge types the character can be declared in. They have nothing to do with whether or not a character can participate in (Jon Snow would be pretty worthless, otherwise) or can join a particular challenge through some other means.
As for the stealth thing, yes: Being bypassed by stealth only stops a character from being declared as a defender. It doesn't stop the character from becoming a defender through a card effect.
If I kneel a character to defend (Timing structure 4.2.1) and then, in the following action window, play "Ours is the fury", is it legal ? My OCTGN opponent didn't agree because of the "...is NOW participating....". This NOW doesn't necesserily mean that the character can't already be defending....
Legal, yes. The only requirement is that the character be kneeling - after which two independent effects are applied; the character is made to participate (if it's particpating, this changes nothing), and there's a lasting effect applied to the character to stand them if you win the challenge.
It still has an effect. The two effects are independent, they aren't linked by a "to" or "then". As long as one applies, you can play it. For more on that. For a complete detailed response on this, you can see this thread.
I love this card. I have been working on a Baratheon Summer deck since the new pack came out. This card so far has done so much work for me getting to attack with a big guy and then defend with him again is great especially because now he can defend again or be standing for dominance. Especially great on Renown Characters.
