Can the reaction on this card be used to strike an objective twice in an encounter as the attacker?
Assuming you use her ability, she will always strike twice in 1 engagement.

Does Jan strike immediately after her reaction? Or do you remove the focus (upon returning a unit to your hand) and then it's dark side's turn to strike? And THEN back to Jan (if she survived)?

DS must resolve a strike if able, then you can strike with Jan once again.

Where does the "limit once per turn" applies to? Only to the "remove 1 focus token", or the entire reaction?

Does the Limit once per Turn applies to the entire reaction or only to the removing focus token part?

Limits apply to abilities, thus it applies to Jan's reaction ability in entirety.

“Limit once per X” refers to that specific ability on that particular card.

Question regarding the timing: after Jan is focused to strike, do you put a friendly unit into your hand and THEN resolve the strike (do damage, etc.)?

Yep, the Reaction takes place immediately after placing the focus token, before resolving icons.
