Does this effect take place after you discard your edge stack? Can I pitch a unit to the edge and then put it into play after if I win?

"The player with the higher total (force icons) wins the edge battle and has the edge [...].

Each player THEN discards the cards he placed into his edge stack". Pg. 20 from the Rulebook.

 

So as I understand, you can't use Out of the Mists to retrieve a unit you just discarded for edge.

You win edge --> you react with the objective --> you discard.

Resolving edge in the rulebook:
 
After resolving fate cards, each player counts the number of Force icons on cards in his edge stack. The player with the higher total wins the edge battle and has the edge for the remainder of the engagement. In the event of a tie, the edge goes to the defending player. 
 
Each player then discards the cards he placed into his edge stack.
 
The winner of edge battle is determined before you discard edge stack.
Thats kinda what I thought. Like Stay on Target.

But if there is no enemy defenders?

If there's no enemy defender, chances are it's not a *contested* edge battle.
