Am I correct to say that a pilot does not add his/her conflict icons to the piloted vehicle?
Please help clarify Pilot for me - I don't understand why Academy Pilot would be played as a pilot if icons don't combine with those of the vehicle - as he has no text to carry forward.

You are correct. The only case when a pilot adds their icons to the vehicle is when the vehicle is the TIE Fighter Patrol - because it explicitly states that it happens.

 

Academy Pilot, then, has a few uses:

1) It can give the TIE Fighter Patrol one white blast

2) If played on Black Two, it counts as piloted and can prevent one damage each phase (because it only cares about the existence of a pilot, not the identity)

3) It provides one Force icon for the Force struggle if played on a 181st TIE Interceptor

4) It makes the vehicle count as piloted, which can be relevant for The Empire's Elite, the enhancement in Nar Shaddaa Drift or maybe some light side effects (though none come to mind right now)

It makes the piloted vehicle immune to Desperation, as well.
