If my Walder sides with my opponent when he attacks, who controls him?
My guess is still me, so I don't have to kill one of my participating characters for deadly (During a challenge, if the attacking player controls the most participating characters with the “Deadly” keyword, the defending player must choose and kill a defending participating character after the challenge resolves.) And vice versa, if I attack and Walder sides with the defending player, he must kill someone for deadly.
Also, I can choose him to die for MIL claim in a challenge even if he was on my opponent's side.

It seems fishy, so what am I missing?
You control Walder Frey at all times and his Deadly keyword will count for you, even if he is on the other side of the challenge.

If you are attacking, and the opponent declares enough defenders to begin winning the challenge, causing Walder Frey to participate on the defending side, if you have more Deadly than the defender, he can choose to satisfy Deadly with Walder Frey based on the rule you just quoted about Deadly.

Yes, if Walder Frey helps the attacker beat you, you can choose him for claim.

He's an unusual character in the game, but his ability is oh so nedly.
You make it sound as if "currently" is a continuous check - so that if the side he's not on becomes the currently winning side, he switches sides. Are you sure about this?
He has to kneel to "switch" sides so he will not be able to bounce around from one "winner" to another too much unless there is a way to stand him constantly.
Ye, that's what I assumed too.

Actually even if he is standing, the part that triggers him is the "after at least 1 defender has been declared". Which should only happen once per challenge right?

Yes thats correct, there probably isn't any cards currently that allow you to declare new defender, atleast not in declare wording.
Since his ability doesn't have a response or a player-action window phase preceeding it, does this mean that if Walder is standing (and able to kneel), you *must* kneel him and use his ability during *any* challenge after at least 1 defender is declared?
That is exactly what it means.
He's great! I kinda wish Walder could "change control" for his ability. Then you could give him the "House Bolton" trait & play In Ramsay's Name (ASoSilence) for added chaos.

So, this would imply if I controlled Walder Frey and jumped him into an opponents challenge against another opponent, his Deadly would not be applied. Is that correct?

Correct. It wouldn't count for either side. Assuming he is on the defending side, he could still be killed for deadly since he is a "defending participating character".
