How do you guys feel about using this in Joust games? What if your deck relies heavily on one character? (or if it is just THAT much better with him)
I'm not at all a fan unless your deck absolutely relies on a character and there's no alternative. Your opponent is going to play a plot that will only help him/her - you're playing one that helps both of you. It doesn't make sense to me, unless you're running a card like The Weasel's Way (TIoR).
Maybe in a brotherhood deck with weak draw I would use it. Otherwise, exactly what Wamma said.
I'm trying to build a Brotherhood deck for an unofficial Joust tournament. But I'm trying to make it so that it can have a nice draw mechanic to back it up. A friend insists that without Summoning Season to get you Beric Dondarrion (IG) if you didn't draw it, the deck is probably doomed.
What house are you thinking of building it out of? Personally I'd just run 3x Much and More to help search for him, or alternatively if you can run enough Knights to justify it then 3x Muster. Both are probably better options than Summoning Season, the latter particularly.

Or just play Lannister Black Sails infamy Brotherhood so you can search for berick with Naval Reinforcements (RotK) from the hold ;) and if he is not in hold chances are you will draw it fast.
If i use Rickon Stark to copy this plot cards effect do both myself and the chosen opponent search again or is it just myself as im the one copying the effect?
Both, for the reason you stated - He copies the effect, and the effect is for both players to search.
