How does this work in relation to edge-enable combat icons? My understanding would be that, as the timing is after you reveal cards in your edge stack, the winner of the edge battle hasn't yet been determined, so the unit you strike immediately with would only resolve its black icons, and its edge-enabled icons would be ignored. Is that correct?

That's correct. The reaction on Inexorable Destruction occurs before the edge battle's winner is determined, so if the Dark Side player triggers it, the unit that strikes will only be able to use black icons.

Also, the reaction occurs before Twist of Fate has a chance to resolve.

"reveal" is prior to "resolve".

If I win edge after using this reaction, am I allowed two strikes by two separate participating units before my opponent gets one?

Yes, as long as your opponent isn't using any card abilities to strike outside of the normal order.
