So with the way the cards worded it reads like Jacelyn would discard two cards from an opponent's hand. Is this true or is it only one?

The wording is terrible. The "a card" makes it clear it's talking about one card with the intent that it be selected randomly.

Can he blocks creature with stealh or Wex Pyke (KotS)?
I believe (but I could be wrong, so someone else correct me if I am) that he can block chars with stealth, because they can't declare stealth on him. However, he can't block when Wex Pyke is attacking, because Wex is not targeting him with his ability, but rather affecting the state of the game.

From the FAQ:
"Card abilities" (i.e. "Character ability," "Location ability," or "Attachment ability") refers to anything in a card's text box, except for traits, keywords, and flavor text.

So he is not immune to stealth, deadly or intimidate, but he is immune to Wex's effect.

Thanks! But it seems, that Wex's effect is too cool for them too, because Wex Pyke is not targeting him.

@Shadow, here is a better thread that directly addresses your question. The plot they mention, Tourney for the Hand (Core), makes knight characters immune to character abilities. As Ktom explains it, the character ability is affecting the character's eligibility to participate in the challenge, not the player. So characters immune to character abilities can ignore it.
Huh, so I had it completely backwards. Good to know.
