You can look at Shielding as at least having 1 extra HP, possibly even more than that.
Learning the game (haven't actually played yet, but know the rules as well as I can otherwise)...

I am wondering how to take full advantage of this unit. It's symbols will rarely be involved, yes? Or am I missing something? Any help would be greatly appreciated.

You'll rarely use the reaction unless it will affect the board greater than the icons.

I was playing a game against my friend and I used the AT-AT's text ability instead of resolving it's combat icons to remove a pilot enhancement from play. I believe the move is valid because the texts only applies to non-limited enhancements, and the pilot while unique was not non-limited.

It was indeed, a valid move. Pilots are no longer units, but enhancements when piloting a vehicle, and thus far, none are limited. Unique has nothing to do with limited so that's not related in any way.
