He can Sac himself right? I figured he could but wanted to make sure it was legal.

Yeah he can sacrifice himself.

With this Jon in relation to Catelyn(WoTH) and Robb Stark (core).  If Jon activates his ability, sacrificing one character to stand another, both Catelyn's power gain and Robbs ability to stand every character you control, would trigger from the same sacrifice , correct as the are both reactions to a sacrifice or death?

In order for you to trigger Jon's ability, there must be an eligible target in play (a kneeling unique stark character). Note that in this case, the target does not need to be under your control.

 

So you check if there is at least one kneeling unique stark character in play, then you sacrifice a stark character, then you need to choose an eligible target, if able. If you've just sacrificed your only eligible character, but your opponent has one, then you must choose that opponent's character. If there are no eligible targets after costs are paid, then the effect is aborted.
